Why is Saffron of Santa Fe a Farm to Restaurant participant?

Partners Penny Sandoval and Carmen Rodriguez drive all the way to a rancher in Ft. Sumner to buy 2 to 3 grass-fed steers. They purchase from the Farmers Market and hope to make more contacts with local vendors in the upcoming season. They rotate product to be able to buy from multiple sources.

Why is purchasing local important?
