Offering locals and visitors alike a time tested taste of the best that Northern New Mexico has to offer in both cuisine and hospitality. A family owned and operated business now under the management of the 3rd generation of Carswells. The Shed is located on Palace Avenue just east of the Plaza. La Choza is located on Alarid Street on the east side of the railroad tracks by the Cerrillos and St. Francis crossroads.
Why is THE SHED & LA CHOZA RESTAURANTS both Farm to Restaurant participants?
The Carswell family has purchased chile for the past 20 year direct from the farm in Hatch valley. They bring it up on a trailer and process it here in Santa Fe. Posole comes from Espanola Valley. Tortillas are made in the area and delivered by local distribution. They use local farm produce (salad and squash) during the July-October season. They are planning to increase their local vegetable purchasing and are looking for grass-fed meat.
Why is purchasing local food important?

Ask the Staff!
They apprise the wait staff of items they are using as the foods become available and them them relay the info to customers. They also have the kitchen staff handle local items in a way that they can be showcased on certain plates.
